Bacon Wrapped Pork Chops

This is a pretty simple recipe. The execution (wrapping the bacon) is not easy, but the end taste is very good. I normally use my pork chop brine to prepare the chops and also normally use extra bacon to flavor a vegetable (like bacon and green beans or corn with bacon).

 

Ingredients

6 (1 inch thick) boneless pork chops
4 ounces of grated cheese (Monterrey cheddar works well)
12 slices bacon

 

Cooking Directions

Heat the oven to 350 degrees.

Fry the bacon in a skillet over medium heat until cooked through but still flexible. Wrap two slices of bacon around each pork chop. Place the pork chops in a baking dish.

Bake for 30 - 40 minutes in the preheated oven (internal temperature of 162)

Add the cheese to the top for the final 5 minutes (should also raise the internal temp to around 168).

Serve - here you can see I added the extra bacon to the green beans and served with the sweet potato
