Beef and Bean Burritos

This is actually a very easy way to make a lot of burritos. The leftovers heat well (as well as the leftover main mixture). This is also one of those recipes that you can completely modify, omit or add ingredients depending on your tastes or what you have on hand.
 
The pictures show one of the first times I made it, where I actually only made half the recipe and omitted the black beans (just didn't think to add them).  The next time I made it, I used the amounts listed in this recipe (so the pictures are not indicative of the entire recipe).

 

Ingredients

1 pound ground beef, cooked
1 Taco Seasoning mix
2 cans refried beans
1 can black beans
2 cups cooked white rice
2 cups cheddar cheese (sharp or mild - your preference)
2 cups of salsa (your choice)
16 tortillas
Tomatoes (optional)
Sour Cream (optional)
Guacamole (optional)

 

Cooking Directions

Heat oven to 425 degrees.
Cook white rice. Set aside.
Brown the ground beef. Add taco seasoning and water (follow directions on the taco seasoning for the amount of water to add).
In a large mixing bowl, mix the beef, rice, refried beans, black beans, salsa and cheese (leave enough cheese to top the burritos with cheese).
Put about 2 Tablespoons of mixture in each burrito.  Fold.  Place in pan. Top with cheese.
Bake for 25 minutes.  Let cool and serve with Tomatoes, sour cream and guacamole.
 
Refrigerate leftover burritos (or freeze leftover mixture).  To reheat leftovers, heat oven (or toaster oven) to 425.  Cook for 10 minutes on each side.  If frozen, thaw and bake them in the manner in the original recipe.
